Description

Juicy lemon garlic chicken baked with baby potatoes and broccoli in one easy sheet pan dinner. Bright citrus flavor and savory herbs make this a healthy family favorite.


Ingredients

  • 2 pounds boneless skinless chicken thighs
  • 1 pound baby Dutch potatoes, quartered
  • 3 cups broccoli florets
  • 1/3 cup olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons lemon zest
  • 1 tablespoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon sugar
  • 1 cup Greek yogurt or sour cream
  • 1/4 cup grated Parmesan
  • 1/4 cup chopped parsley
  • 1 tablespoon lemon juice (for sauce)
  • 1 tablespoon chopped chives
  • 1 tablespoon minced dill
  • 1/4 teaspoon salt (for sauce)
  • 1/4 teaspoon ground cumin (for sauce)
  • 1/8 teaspoon black pepper (for sauce)

Instructions

  1. Preheat oven to 400°F.
  2. Whisk together olive oil, garlic, lemon juice, zest, Dijon mustard and seasonings.
  3. Reserve 2 tablespoons marinade for vegetables.
  4. Add chicken to remaining marinade and marinate 20 minutes.
  5. Line sheet pan with foil and spray with cooking spray.
  6. Toss potatoes with 1 tablespoon reserved marinade and salt.
  7. Bake potatoes 15 minutes.
  8. Remove pan and push potatoes to one side.
  9. Toss broccoli with remaining reserved marinade and add to pan.
  10. Add chicken in single layer.
  11. Bake 17–22 minutes until chicken reaches 170–175°F.
  12. Whisk sauce ingredients together and refrigerate.
  13. Serve chicken and vegetables with yogurt herb sauce.

Notes

  1. Use chicken thighs for juicier results.
  2. Slice and pound chicken breasts evenly if substituting.
  3. Cut potatoes uniformly for even cooking.
  4. Let refrigerated chicken sit at room temperature 20 minutes before baking.
  5. Store leftovers in refrigerator up to 5 days.
  6. Freeze cooked chicken up to 3 months.
