Description

A quick and healthy Lemon Garlic Shrimp and Asparagus recipe with juicy shrimp, crisp asparagus, fresh garlic, lemon zest, and a bright zesty garlic sauce. Ready in just 20 minutes.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 4 cloves garlic, minced
  • Juice and zest of 1 lemon
  • 2 tablespoons olive oil, divided
  • 1 tablespoon butter, optional
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes, optional
  • 2 tablespoons freshly chopped parsley, for garnish

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels. Season with salt and black pepper.
  2. Snap off the woody ends of the asparagus and cut the stalks into 2-inch pieces.
  3. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the minced garlic and cook for 1 to 2 minutes until fragrant.
  4. Increase the heat to medium-high. Add the shrimp in a single layer and cook for 2 to 3 minutes per side until pink and opaque.
  5. Remove the shrimp from the skillet and set aside.
  6. Add the remaining 1 tablespoon olive oil to the same skillet. Add the asparagus and cook for 3 to 4 minutes until tender-crisp.
  7. Return the shrimp to the skillet with the asparagus.
  8. Add the lemon juice, lemon zest, and butter if using. Toss everything together and cook for 1 to 2 minutes until coated and heated through.
  9. Garnish with freshly chopped parsley and red pepper flakes if desired.
  10. Serve immediately while hot.

Notes

  1. Do not overcook the shrimp, or they may become rubbery.
  2. Pat the shrimp dry before cooking so they sear instead of steam.
  3. Use fresh lemon juice and zest for the brightest flavor.
  4. Butter is optional, but it gives the sauce a richer finish.
  5. Store leftovers in an airtight container in the refrigerator for up to 3 days.
