Description

Tender lemon-flavored cookies with a powdered sugar coating that creates a classic meltaway texture.


Ingredients

  • 2 cups all-purpose flour
  • 0.25 cup cornstarch
  • 0.25 teaspoon salt
  • 1 cup powdered sugar for coating
  • 1 teaspoon lemon zest for coating (optional)

Instructions

  1. Cream butter and powdered sugar until light and fluffy.
  2. Mix in lemon zest, lemon juice, and vanilla on low speed.
  3. Whisk flour, cornstarch, and salt in a separate bowl.
  4. Gradually add dry ingredients to wet mixture until a soft dough forms.
  5. Divide dough in half and shape into logs.
  6. Wrap and refrigerate until firm.
  7. Preheat oven to 350°F and line baking sheets.
  8. Slice dough into 0.25-inch rounds and place on sheets.
  9. Bake until edges barely turn golden.
  10. Cool briefly, then coat warm cookies in powdered sugar.
  11. Cool completely and coat again if desired.

Notes

  1. Do not overmix dough.
  2. Chilling is required for clean slices.
  3. Second coating adds thicker finish.
