Instructions
- Cream butter and powdered sugar until light and fluffy.
- Mix in lemon zest, lemon juice, and vanilla on low speed.
- Whisk flour, cornstarch, and salt in a separate bowl.
- Gradually add dry ingredients to wet mixture until a soft dough forms.
- Divide dough in half and shape into logs.
- Wrap and refrigerate until firm.
- Preheat oven to 350°F and line baking sheets.
- Slice dough into 0.25-inch rounds and place on sheets.
- Bake until edges barely turn golden.
- Cool briefly, then coat warm cookies in powdered sugar.
- Cool completely and coat again if desired.
