Description

Soft lemon poppy seed cookies topped with creamy cheesecake frosting, perfect for spring and holiday baking.


Ingredients

Scale
  • 200 g granulated sugar
  • 1 tablespoon lemon zest
  • 110 g butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 210 g all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 tablespoon poppy seeds
  • 1/2 teaspoon salt
  • 200 g cream cheese
  • 75 g powdered sugar
  • 1 tablespoon honey
  • 120 g heavy cream

Instructions

  1. Melt butter and let cool
  2. Mix sugar with lemon zest
  3. Combine butter, sugar, egg, and vanilla
  4. Mix dry ingredients and combine
  5. Scoop dough and chill 30 minutes
  6. Bake at 355F for 10 minutes
  7. Cool completely
  8. Whip frosting ingredients
  9. Pipe frosting onto cookies

  2. Use fresh lemon zest for flavor
