This easy Lemon Zucchini Bread is moist, fluffy, and bursting with fresh lemon flavor. It is a bright quick bread made with pantry staples, shredded zucchini, and a simple lemon glaze.

- 1 1/2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 3/4 cup granulated sugar
- Zest of 1 large lemon
- 2 large eggs
- 1/2 cup vegetable, avocado, or canola oil
- 1 1/2 teaspoons fresh lemon juice
- 1 cup grated unpeeled zucchini
- 1 cup powdered sugar
- 4 teaspoons fresh lemon juice, for glaze
Instructions
- Preheat oven to 350 degrees F. Grease and flour an 8 x 4-inch loaf pan.
- In a large bowl, whisk together the flour, salt, baking soda, and baking powder.
- In another bowl, combine the sugar and lemon zest, then stir well until fragrant.
- Add the eggs, oil, and lemon juice to the sugar mixture and stir until smooth.
- Stir in the dry ingredients just until combined.
- Grate the zucchini on the large holes of a box grater. If it feels very wet, gently squeeze out some moisture with paper towels.
- Fold the zucchini into the batter, then pour the batter into the prepared loaf pan.
- Bake for 45 to 50 minutes, or until a toothpick inserted in the center comes out clean.
- Let the bread rest in the pan for 10 minutes, then remove it to a wire cooling rack to cool completely.
- In a small bowl, stir together powdered sugar and fresh lemon juice until smooth.
- Drizzle the glaze over the cooled bread. Slice and serve.
Notes
- If the shredded zucchini seems extra wet, gather it in paper towels and squeeze it over the sink before adding it to the batter.
- Cool the loaf completely before glazing so the glaze sets on top instead of melting into the bread.
- To freeze, wrap the cooled loaf tightly in plastic wrap and place it in a freezer-safe container for 2 to 3 months.
- Thaw frozen bread on the countertop, or defrost individual slices briefly in the microwave.
