- 4 large potatoes, peeled and chopped

Instructions
- Heat olive oil in a large pot over medium heat and sauté onion, carrots, celery, and garlic until softened.
- Add lentils, diced tomatoes, vegetable stock, smoked paprika, and thyme, then bring to a boil.
- Reduce heat and simmer for 30 to 35 minutes until lentils are tender and stew thickens.
- Boil potatoes in salted water until fork-tender, then drain well.
- Mash potatoes with milk, butter, salt, and pepper until smooth and creamy.
- Serve lentil stew over mashed potatoes and garnish if desired.
