Description

A comforting dish of hearty lentil stew served over creamy mashed potatoes, perfect for cozy vegetarian meals.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 1 cup dried green or brown lentils, rinsed
  • 1 can (14 ounces) diced tomatoes
  • 4 cups vegetable stock
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 4 large potatoes, peeled and chopped
  • 1/4 cup milk or plant-based alternative
  • 2 tablespoons butter or vegan substitute
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat and sauté onion, carrots, celery, and garlic until softened.
  2. Add lentils, diced tomatoes, vegetable stock, smoked paprika, and thyme, then bring to a boil.
  3. Reduce heat and simmer for 30 to 35 minutes until lentils are tender and stew thickens.
  4. Boil potatoes in salted water until fork-tender, then drain well.
  5. Mash potatoes with milk, butter, salt, and pepper until smooth and creamy.
  6. Serve lentil stew over mashed potatoes and garnish if desired.

Notes

  1. Substitute sweet potatoes for a different mash flavor.
  2. Add spinach or kale to the stew for extra greens.
  3. Use plant-based milk and butter to keep the dish vegan.
