- Prepare the Potatoes: Increase oven temperature to 400°F (200°C). Toss cubed potatoes with the reserved bacon fat (or olive oil), salt, pepper, and paprika if using. Spread evenly on a baking sheet.
- Roast the Potatoes: Bake for 25–30 minutes, stirring halfway, until golden brown and crispy on the edges.
- Combine Ingredients: Mash the roasted garlic cloves into the potatoes. Add crumbled bacon, sprinkle with cheddar cheese, and toss gently to mix.
