- 1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch pieces

- 1 tablespoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 to 2 cups shredded cheddar cheese
- 1/2 cup cooked, chopped bacon
- 2 green onions, thinly sliced
- Nonstick cooking spray, for the baking dish
- Sour cream, for serving, optional
Instructions
- Preheat the oven to 400°F. Coat a 9×13-inch baking dish with nonstick cooking spray.
- Spread the potatoes evenly in the prepared baking dish. Drizzle them with 1 tablespoon olive oil and toss to coat.
- Bake the potatoes uncovered for 40 minutes, stirring gently halfway through the cooking time.
- Whisk the remaining 2 tablespoons olive oil with the paprika, garlic powder, salt, and black pepper.
- Add the diced chicken to the seasoning mixture and stir until every piece receives an even coating.
- Carefully remove the potatoes from the oven. Add the seasoned chicken and gently toss it with the potatoes.
- Return the uncovered dish to the oven and bake for 15 minutes, or until the chicken reaches an internal temperature of 165°F.
- Sprinkle the cheddar cheese, chopped bacon, and sliced green onions evenly over the casserole.
- Bake for another 5 minutes, or until the cheese melts and bubbles.
- Let the casserole rest for 5 minutes before serving with sour cream, if desired.
