Description

Low-Carb Cheeseburger Bowl made with seasoned ground beef over crisp lettuce, cheddar cheese, pickles, and a creamy tangy burger sauce for a quick 20-minute dinner.


Ingredients

  • 1 lb ground beef (80/20 recommended)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 tablespoon olive oil
  • 4 cups shredded iceberg or romaine lettuce
  • 1/2 cup dill pickle chips
  • 1/2 cup chopped onion (optional)
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon apple cider vinegar
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon onion powder

Instructions

  1. In a small bowl combine mayonnaise, ketchup, mustard, apple cider vinegar, smoked paprika, and onion powder until smooth to make the sauce
  2. Place ground beef in a bowl and mix with salt, black pepper, and garlic powder
  3. Heat olive oil in a skillet over medium-high heat and cook the beef while breaking it into crumbles for about 6 to 8 minutes until browned
  4. Drain excess grease from the skillet
  5. Divide shredded lettuce into four bowls and top with cooked ground beef
  6. Add shredded cheddar cheese, pickle chips, and chopped onion over each bowl
  7. Drizzle tangy burger sauce over the bowls and serve immediately

Notes

  1. Skip ketchup or use keto ketchup to reduce carbs
  2. Ground turkey or chicken can replace ground beef
  3. Store sauce separately during meal prep to keep lettuce crisp
