Description

This creamy low carb chicken casserole combines tender chicken, broccoli, turkey bacon, ranch dressing, garlic, cheddar, and mozzarella in an easy family-friendly keto dinner.

Ingredients

Scale
  • 5 cups broccoli florets
  • 8 slices cooked turkey bacon, chopped
  • 4 cups cooked chicken, shredded or diced
  • 3 cloves garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1 cup ranch dressing
  • 1/2 cup shredded cheddar cheese, for topping
  • 1/2 cup shredded mozzarella cheese, for topping
  • Nonstick cooking spray or butter, for the baking dish
  • 2 tablespoons heavy cream or sour cream, optional
  • Chopped parsley, sliced green onions, or red pepper flakes, optional

Instructions

  1. Preheat the oven to 375°F and lightly grease a 9-by-13-inch baking dish.
  2. Steam or blanch the broccoli for 3 to 4 minutes, until bright green and slightly tender.
  3. Drain the broccoli thoroughly and pat away excess moisture.
  4. Add the chicken, broccoli, turkey bacon, garlic, 1/2 cup mozzarella, 1/2 cup cheddar, and ranch dressing to a large bowl.
  5. Stir gently until the ranch dressing evenly coats the ingredients.
  6. Stir in the optional heavy cream or sour cream for extra richness.
  7. Spread the chicken mixture evenly in the prepared baking dish.
  8. Sprinkle the remaining cheddar and mozzarella over the top.
  9. Bake uncovered for 25 to 30 minutes, until the center is hot and the cheese is melted and bubbly.
  10. Let the casserole rest for 5 to 10 minutes before serving.

Notes

  1. Use rotisserie chicken to reduce preparation time.
  2. Drain the broccoli thoroughly to prevent a watery casserole.
  3. Cauliflower or roasted zucchini can replace the broccoli.
  4. Freshly shredded cheese usually melts more smoothly than pre-shredded cheese.
  5. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  6. Freeze tightly wrapped portions for up to 2 months and thaw them overnight before reheating.
