Ingredients

  • 1 lb ground beef
  • 2 cups uncooked macaroni
  • 2 cups shredded cheddar cheese
  • 1/2 cup diced onion
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/4 cup milk
  • 2 tbsp butter
  • 2 cups milk
  • 2 tbsp flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dry mustard

Instructions

  1. Preheat the oven to 350°F and grease a baking dish.
  2. Mix ground beef, onion, breadcrumbs, egg, milk, salt, and pepper until combined and press into the dish.
  3. Bake the meatloaf layer for 20 minutes.
  4. Cook the macaroni until tender, then drain.
  5. Melt butter in a saucepan, stir in flour, and whisk in milk until thickened.
  6. Season the sauce and stir in shredded cheese until melted.
  7. Combine macaroni with cheese sauce and spread over meatloaf.
  8. Bake for 25 minutes until bubbly and lightly golden.

Notes

  1. Let the casserole rest for 5 minutes before slicing.
  2. Sharp cheddar gives the best flavor.
  3. Leftovers reheat well in the oven or microwave.
