Description

A creamy Mac and Cheese Soup that turns classic comfort food into a warm, satisfying bowl perfect for easy dinners.

Ingredients

Scale
  • 45 cups chicken broth or stock
  • 1¼ cups uncooked elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cloves garlic, minced
  • 1 cup milk
  • 4 ounces spreadable cream cheese
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded Swiss cheese
  • ½ teaspoon onion powder
  • ½ teaspoon dry mustard powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Bring broth to a boil and cook macaroni until al dente.
  2. Melt butter and whisk in flour, cooking briefly.
  3. Add garlic, then whisk in milk until smooth.
  4. Stir in seasonings and cook until thick.
  5. Lower heat and whisk in cheeses until smooth.
  6. Combine pasta and broth with cheese sauce and heat through.
  7. Season to taste and serve hot.

Notes

  1. Soup thickens as it stands; add extra broth if needed.
  2. Use freshly shredded cheese for best texture.
  3. Smoked cheddar or Gruyère add deeper flavor.
