A hearty fusion of two classic comfort foods! This macaroni and cheese meatloaf combines savory meatloaf with creamy, cheesy pasta for a dish that’s as satisfying as it is indulgent.

 


Ingredients

  • 1 lb ground beef (or ground turkey/chicken)
  • 1 cup breadcrumbs
  • 1 egg
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano

For the Mac and Cheese:

  • 2 cups cooked elbow macaroni
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 1 cup milk
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1/2 tsp mustard powder (optional)
  • 1/4 tsp paprika (optional)

Instructions

  • Prepare the Meatloaf:
    • Preheat oven to 350°F (175°C).
    • In a large bowl, combine ground meat, breadcrumbs, egg, onion, garlic, salt, pepper, and oregano. Mix until evenly combined.
    • Shape the mixture into a loaf and place it in a greased loaf pan or on a baking tray lined with parchment paper. Bake for 45 minutes or until it reaches an internal temperature of 160°F (71°C).
  • Make the Macaroni and Cheese:
    • Cook macaroni according to package instructions until al dente. Drain and set aside.
    • In a saucepan over medium heat, melt butter. Whisk in flour and cook for 1-2 minutes until lightly golden.
    • Gradually add milk, whisking constantly to create a smooth sauce. Add mustard powder and paprika, if desired.
    • Stir in shredded cheese until fully melted. Combine the cheese sauce with cooked macaroni.
  • Assemble the Dish:
    • Remove the baked meatloaf from the oven and carefully layer the prepared macaroni and cheese on top.
    • Return the dish to the oven and bake for an additional 10-15 minutes until the cheese is bubbling and golden.
  • Serve and Enjoy:
    • Let the dish rest for 5 minutes before slicing and serving. Pair it with a fresh green salad or steamed vegetables for a complete meal.

Notes

  • Don’t Overmix the Meatloaf:
    Overmixing the ground meat can make the meatloaf dense and tough. Mix just until the ingredients are combined to keep it tender and moist.
  • Use Freshly Grated Cheese for the Best Results:
    Pre-shredded cheese often contains additives that prevent it from melting smoothly. For the creamiest mac and cheese, grate your own cheese.
  • Allow the Meatloaf to Rest Before Slicing:
    Letting the meatloaf rest for 5-10 minutes after baking helps the juices redistribute, ensuring a moist and flavorful slice every time.
