Description

Mango Oatmeal Bars are buttery, fruity dessert bars made with a simple oat crumble crust, sweet mango filling, and golden crumb topping.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 3/4 cup old-fashioned rolled oats
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar, packed
  • 1/2 teaspoon salt
  • 2 cups coarsely chopped fresh ripe mango
  • 1/3 cup granulated sugar
  • 2 tablespoons lemon juice
  • 2 teaspoons cornstarch

Instructions

  1. Preheat the oven to 350°F. Line an 8-inch square pan with foil or parchment and coat it lightly with cooking spray.
  2. Melt the butter in a large microwave-safe bowl.
  3. Add the flour, oats, 1/2 cup granulated sugar, brown sugar, and salt. Stir until the mixture looks sandy with some larger crumbs.
  4. Reserve 1 heaping cup of the crumble mixture for the topping.
  5. Press the remaining crumble mixture firmly into the prepared pan to form an even crust.
  6. In a mixing bowl, toss the chopped mango with 1/3 cup granulated sugar, lemon juice, and cornstarch.
  7. Spread the mango mixture evenly over the crust.
  8. Sprinkle the reserved crumble mixture over the mango layer, squeezing some pieces gently for larger crumbs.
  9. Bake for about 50 minutes, or until the edges look set, the center has set, and the topping looks pale golden.
  10. Place the pan on a wire rack and cool for at least 1 hour before slicing into bars.

Notes

  1. Use old-fashioned rolled oats, not quick oats or instant oats.
  2. If using frozen mango, thaw it fully and drain excess liquid before mixing.
  3. For cleaner slices, chill the cooled bars for 30 minutes before cutting.
  4. Store airtight at room temperature for up to 1 week, refrigerate for up to 10 days, or freeze for up to 6 months.
