Description

This refreshing mango slaw is a vibrant and healthy side dish combining sweet mangoes with crunchy vegetables and a zesty dressing.


Ingredients

Scale
  • 2 ripe mangoes, diced
  • 2 cups green cabbage, shredded
  • 1 large carrot, grated
  • 1 red bell pepper, sliced
  • 1/4 cup red onion, sliced
  • 1/4 cup cilantro, chopped
  • 3 tbsp lime juice
  • 2 tbsp honey or maple syrup
  • 1 tbsp sesame oil
  • Salt and pepper to taste

Instructions

  1. Dice mangoes and prepare all vegetables
  2. Combine mango, cabbage, carrot, bell pepper, onion, and cilantro
  3. Whisk lime juice, honey, sesame oil, salt, and pepper
  4. Pour dressing over mixture and toss gently
  5. Let sit 5-10 minutes before serving
  6. Serve chilled or at room temperature
