Description

Maple roasted chicken with sweet potatoes and apples combines crispy bone-in chicken thighs, tender fall produce, pure maple syrup, thyme, and sage in one cozy skillet dinner.

  • 4 bone-in chicken thighs
  • 1 small onion, quartered
  • 2 medium sweet potatoes, peeled and chopped
  • 1 medium apple, diced
  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 tablespoons pure maple syrup
  • 1 tablespoon fresh thyme
  • 1 tablespoon fresh sage

Instructions

  1. Preheat the oven to 400°F. Heat a large cast iron skillet over medium-high heat for several minutes.
  2. Add 1 tablespoon olive oil to the hot skillet. Place the chicken thighs skin side down and brown for several minutes, until the skin turns golden and releases easily from the pan.
  3. While the chicken browns, peel and chop the sweet potatoes, quarter the onion, and dice the apple.
  4. Combine the remaining 1 tablespoon olive oil, salt, black pepper, and maple syrup in a small bowl. Toss the sweet potatoes, apple, and onion with the maple mixture.
  5. Flip the chicken thighs so the skin faces upward. Arrange the coated sweet potatoes, apple, and onion around the chicken.
  6. Sprinkle the fresh thyme and sage over the chicken and vegetables.
  7. Transfer the skillet to the oven and roast for about 1 hour, or until the thickest part of the chicken reaches 165°F and the sweet potatoes and apples are fork tender.
  8. Remove the skillet from the oven and let the chicken rest for several minutes before serving.

Notes

  1. Bone-in chicken thighs provide rich flavor, but you can substitute chicken breasts. Adjust the cooking time according to their size.
  2. Fresh thyme and sage add savory fall flavor. Fresh rosemary also works well.
  3. Do not skip browning the chicken skin because this step creates a crisp texture and adds flavor.
  4. If you do not have a cast iron skillet, use another oven-safe skillet or brown the chicken first and transfer everything to an oven-safe baking dish or baking sheet.
  5. Always check chicken with an instant-read thermometer and cook it to an internal temperature of 165°F.
