Description

This Marinated Cucumbers, Onions, and Tomatoes recipe is a refreshing and flavorful side dish with a tangy vinaigrette.


Ingredients

Scale
  • 2 cucumbers, thinly sliced
  • 1 pint cherry or grape tomatoes, halved
  • 1 small red or white onion, thinly sliced
  • 1/4 cup apple cider vinegar or red wine vinegar
  • 2 tablespoons extra virgin olive oil
  • 1 clove garlic, minced
  • 1 tablespoon chopped fresh parsley or dill
  • Salt and pepper to taste
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. Wash and slice cucumbers, halve tomatoes, and slice onion
  2. Whisk vinegar, olive oil, garlic, salt, and pepper
  3. Combine vegetables in a bowl
  4. Pour marinade and toss
  5. Refrigerate at least 30 minutes
  6. Toss again and garnish before serving
