Ingredients

  • 1 ½ pounds boneless skinless chicken breasts, cut into 1-inch pieces
  • 10 ounces penne pasta
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 2 teaspoons garlic, minced
  • 3 tablespoons all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated parmesan cheese
  • 1 cup sun-dried tomatoes, drained
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • Salt and pepper to taste
  • Fresh basil, chopped
  • Additional parmesan cheese (optional)

Instructions

  1. Cook penne pasta according to package instructions. Drain and set aside.
  2. Season chicken with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6–8 minutes until fully cooked. Remove and set aside.
  4. Melt butter in the same skillet. Add garlic and cook for 30 seconds.
  5. Stir in flour and cook 1–2 minutes while whisking.
  6. Slowly whisk in chicken broth, heavy cream, and parmesan until smooth.
  7. Add sun-dried tomatoes, paprika, and Italian seasoning. Simmer until slightly thickened.
  8. Return chicken and pasta to the skillet and toss to coat in sauce.
  9. Garnish with fresh basil and extra parmesan. Serve hot.

Notes

  1. Use oil-packed sun-dried tomatoes for deeper flavor.
  2. If sauce thickens too much, add a splash of pasta water or chicken broth.
  3. Store leftovers in an airtight container for up to 3 days and reheat gently with added broth or cream.
