  • 2 large chicken breasts, boneless and skinless
  • 1 package (9 oz) cheese tortellini (fresh or frozen)
  • 1 cup heavy cream
  • 1/2 cup Parmesan cheese, freshly grated
  • 1/3 cup sun-dried tomatoes, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/4 tsp red pepper flakes (optional)
  • 1/2 cup chicken broth
  • Salt and pepper, to taste
  • Fresh parsley or basil for garnish

Instructions

  • Prepare the Chicken: Season chicken breasts with salt, pepper, and a pinch of garlic powder. Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 6-7 minutes per side or until golden brown and fully cooked. Remove from the skillet and let rest.
  • Cook the Tortellini: While preparing the sauce, cook tortellini in boiling water according to package instructions. Drain and set aside.
  • Make the Sauce: In the same skillet, add a touch more olive oil if needed. Sauté garlic until fragrant (about 30 seconds). Add sun-dried tomatoes and cook for 1-2 minutes. Pour in chicken broth and heavy cream, stirring to combine. Let it simmer for 5-7 minutes until slightly thickened.
  • Add Cheese and Spices: Stir in Parmesan cheese, basil, oregano, and red pepper flakes. Mix until the cheese is fully melted and the sauce is creamy.
  • Combine Everything: Slice the chicken into strips or cubes. Add the cooked tortellini and chicken to the sauce, stirring gently to coat everything evenly. Let it simmer for 2-3 minutes to meld the flavors.
  • Serve: Garnish with fresh parsley or basil and a sprinkle of Parmesan cheese.
