Description

Rich and creamy Marry Me Tortellini made with cheese tortellini simmered in a sun-dried tomato Parmesan cream sauce with garlic and spinach.


Ingredients

Scale
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1½ tablespoons all-purpose flour
  • 1 teaspoon Italian seasoning
  • ½ cup sun-dried tomatoes, julienned
  • 2 cups chicken broth
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 20 ounces cheese tortellini
  • 1 cup heavy whipping cream
  • ½ cup Parmesan cheese, grated
  • 2 cups fresh spinach
  • ½ teaspoon crushed red pepper flakes
  • Fresh parsley or basil

Instructions

  1. Heat olive oil in a skillet and cook garlic until fragrant.
  2. Stir in flour and Italian seasoning and cook briefly.
  3. Add sun-dried tomatoes, broth, salt, and pepper and bring to a simmer.
  4. Add tortellini and cook until tender.
  5. Stir in cream and Parmesan and let sauce thicken.
  6. Add spinach and cook until wilted.
  7. Garnish and serve.

Notes

  1. Use freshly grated Parmesan for best texture.
  2. Adjust seasoning before serving.
  3. Add a splash of broth when reheating leftovers.
