Description

These gooey, fluffy cupcakes are a dream come true for marshmallow lovers! With a soft vanilla or chocolate cupcake base and a delicious marshmallow fluff filling and frosting, every bite melts in your mouth. Perfect for parties, bake sales, or a cozy treat at home.

  • For the cupcakes:

    • 1 ½ cups (190g) all-purpose flour
    • 1 ½ tsp baking powder
    • ½ tsp salt
    • ½ cup (115g) unsalted butter, softened
    • 1 cup (200g) granulated sugar
    • 2 large eggs
    • 2 tsp vanilla extract
    • ½ cup (120ml) whole milk
  • For the filling and frosting:

    • 1 cup (240g) marshmallow fluff
    • ½ cup (115g) unsalted butter, softened
    • 1 cup (125g) powdered sugar
    • 1 tsp vanilla extract
    • 12 tbsp milk (as needed for consistency)

Instructions

  • Preheat & Prep: Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  • Make the batter: In a bowl, whisk together flour, baking powder, and salt. In another bowl, beat butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla. Alternately add dry ingredients and milk, mixing until just combined.
  • Bake: Divide batter evenly among cupcake liners. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  • Prepare the filling: Using a knife or a cupcake corer, create a small hole in the center of each cupcake. Fill with a spoonful of marshmallow fluff.
  • Make the frosting: Beat butter until smooth, then mix in marshmallow fluff, powdered sugar, and vanilla. Add milk if needed for a creamy consistency.
  • Frost & Decorate: Pipe or spread the frosting onto the cupcakes. Optionally, drizzle melted chocolate or sprinkle graham cracker crumbs on top.

Notes

1️⃣ Don’t Overmix the Batter – Mixing too much can make the cupcakes dense instead of light and fluffy. Stir just until the ingredients are combined for the best texture.

2️⃣ Use a Piping Bag for Filling – To neatly fill the cupcakes with marshmallow fluff, use a piping bag or a ziplock bag with the tip cut off. This ensures an even and mess-free filling.

3️⃣ Chill Frosting if Too Soft – If the marshmallow fluff frosting is too runny, pop it in the fridge for 10-15 minutes before piping. This helps it hold its shape better on the cupcakes.
