Ingredients

Scale
  • 2 cups leftover mashed potatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup all-purpose flour
  • 1 large egg
  • Salt to taste
  • Black pepper to taste
  • Optional chopped chives or parsley

Instructions

  1. Add mashed potatoes to a large bowl
  2. Mix in shredded cheese, flour, egg, salt, and pepper
  3. Stir gently until just combined
  4. Shape mixture into golf ball sized portions
  5. Place on parchment lined baking sheet
  6. Bake at 400°F for 20 to 25 minutes until golden and crisp
  7. Cool slightly before serving

Notes
