Description

Mediterranean Red Lentil Soup is a quick, comforting soup made with red lentils, cumin, tomato sauce, and olive oil for a hearty, nourishing meal.


Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup chopped onion
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1/2 cup diced carrot
  • 1 1/2 cups red lentils
  • 1/3 cup tomato sauce
  • 1 cup water
  • 4 cups vegetable or chicken stock
  • Fresh dill or parsley for garnish

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add onion and cook until softened.
  3. Add garlic and carrot and cook briefly.
  4. Stir in salt, pepper, cumin, and tomato sauce.
  5. Add lentils, water, and stock.
  6. Bring to a boil, then simmer until lentils are tender and soup thickens.
  7. Taste and adjust seasoning.
  8. Serve warm with herbs.

Notes

  1. Rinse lentils before cooking.
  2. Add extra stock if soup thickens too much.
  3. Garnish just before serving for best flavor.
