- 1 lb lean ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 6 medium flour tortillas
- 1 can refried beans
- 1 can red enchilada sauce
- 1 cup shredded cheddar cheese
- 1 cup shredded pepper-jack cheese
- 1 Roma tomato, diced
- 1 green onion, diced
- 1 small can sliced black olives
Instructions
- Preheat the oven to 375°F and bake tortillas until crisp on both sides
- Brown ground beef in a skillet and drain grease
- Add taco seasoning and water and simmer until thick
- Warm refried beans until smooth
- Spread beans on a tortilla and top with beef
- Add a second tortilla to create a stack
- Top with enchilada sauce, cheese, and toppings
- Bake until cheese melts and serve
