Description

Crispy tortillas layered with seasoned ground beef, refried beans, enchilada sauce, and melted cheese for a satisfying homemade Mexican pizza.


Ingredients

  • 1 lb lean ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 6 medium flour tortillas
  • 1 can refried beans
  • 1 can red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1 cup shredded pepper-jack cheese
  • 1 Roma tomato, diced
  • 1 green onion, diced
  • 1 small can sliced black olives

Instructions

  1. Preheat the oven to 375°F and bake tortillas until crisp on both sides
  2. Brown ground beef in a skillet and drain grease
  3. Add taco seasoning and water and simmer until thick
  4. Warm refried beans until smooth
  5. Spread beans on a tortilla and top with beef
  6. Add a second tortilla to create a stack
  7. Top with enchilada sauce, cheese, and toppings
  8. Bake until cheese melts and serve

Notes

  1. Crisp tortillas fully before assembling
  2. Use freshly shredded cheese for better melt
  3. Reheat leftovers in the oven for best texture
