- 1 pound cooked shrimp peeled deveined and chopped
- 2 cups tomato juice or clamato juice
- 1/2 cup ketchup
- 1/4 cup fresh lime juice
- 1 to 2 teaspoons hot sauce
- 1/3 cup red onion finely chopped
- 2 Roma tomatoes diced
- 1 cucumber peeled seeded and diced
- 1 jalapeno finely chopped
- 1/4 cup fresh cilantro chopped
- 1 avocado diced
- Salt to taste
- Black pepper to taste
Instructions
- Chop the cooked shrimp into bite size pieces.
- Dice the tomatoes cucumber and red onion into small even pieces.
- Finely chop the jalapeno and cilantro.
- In a large bowl combine the tomato juice ketchup lime juice and hot sauce.
- Add the shrimp tomatoes cucumber onion jalapeno and cilantro to the bowl.
- Season the mixture with salt and black pepper.
- Stir gently until everything is well combined.
- Fold in the diced avocado carefully so it keeps its shape.
- Cover the bowl and refrigerate for about 30 minutes before serving.
- Serve chilled with crackers or tortilla chips.

- Use fresh lime juice for the best flavor.
- Add avocado just before serving to prevent browning.
- Adjust the amount of jalapeno or hot sauce depending on your preferred spice level.
