Description

Creamy Mexican Street Corn Dip packed with bold flavor, Cotija cheese, lime, and spices. Ready in just 20 minutes.


Ingredients

Scale
  • 4 cups corn kernels
  • 2 tablespoons salted butter
  • 1/2 cup mayonnaise
  • 3 tablespoons sour cream
  • juice of half a lime
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • 2/3 cup Cotija cheese
  • 1 tablespoon fresh cilantro

Instructions

  1. Melt butter in a large skillet over medium high heat
  2. Add corn and cook for 8 to 10 minutes until slightly browned
  3. Remove from heat and cool for 10 minutes
  4. Stir in mayonnaise, sour cream, lime juice, garlic powder, and cayenne
  5. Mix in most of the Cotija cheese
  6. Transfer to a serving bowl
  7. Top with remaining cheese and cilantro
  8. Serve immediately or chill before serving

Notes

  1. Do not overcrowd the pan
  2. Dry corn well before cooking
