Description
Mexican Street Corn Salad is a creamy and flavorful side dish made with charred corn, fresh vegetables, lime juice, and cotija cheese inspired by classic Mexican street corn.
Ingredients

- 4 cups corn
- 1 tablespoon olive oil
- 1 red bell pepper diced
- 1 bunch fresh cilantro minced
- 1 jalapeno diced
- 1/2 large red onion diced
- 2/3 cup cotija cheese crumbled
- 3 tablespoons sour cream
- 2 tablespoons mayonnaise
- 4 tablespoons fresh lime juice
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon kosher salt
- 1/4 teaspoon chili powder
Instructions
- Heat olive oil in a saute pan over medium high heat
- Add corn and diced jalapeno and cook until slightly charred about 7 to 10 minutes
- Transfer the corn mixture to a large bowl
- Add red pepper onion and cilantro then mix well
- In a small bowl whisk sour cream mayonnaise lime juice cumin paprika salt and chili powder
- Pour dressing over the corn mixture and mix well
- Add half of the cotija cheese and stir
- Top with remaining cheese and extra cilantro
- Serve and enjoy
Notes
- Prepare vegetables ahead of time but mix dressing just before serving
- Fresh or frozen corn both work well
- Cook corn until slightly charred for best flavor
- Adjust spice by adding more chili powder or reducing jalapeno
- Add more cheese for extra richness
