  • 3 cups cooked shredded chicken (rotisserie preferred)
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup cottage cheese
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 cup shredded mozzarella cheese
  • 1 cup crushed buttery round crackers (like Ritz)
  • 4 tbsp melted butter
  • 2 tbsp chopped fresh parsley

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish lightly.
  • Prepare Mixture: In a large bowl, mix cream cheese, sour cream, cottage cheese, garlic powder, and onion powder until smooth. Stir in shredded chicken and half the parsley.
  • Assemble Casserole: Spread the chicken mixture evenly in the prepared baking dish. Sprinkle mozzarella cheese evenly on top.
  • Prepare Topping: Mix crushed crackers with melted butter and a pinch of garlic powder. Spread evenly over the cheese layer.
  • Bake: Bake for 25–30 minutes or until the top is golden brown and the cheese is bubbly.
  • Serve: Garnish with the remaining parsley and let it cool for 5 minutes before serving.

Notes

1️⃣ Use Rotisserie Chicken for Maximum Flavor: Rotisserie chicken is already seasoned and tender, saving you time and adding extra richness to the casserole. If using plain cooked chicken, season it well before adding it to the mix.

2️⃣ Don’t Skip the Cracker Topping: The buttery cracker topping adds a delightful crunch that contrasts beautifully with the creamy chicken base. For an extra crispy top, broil the casserole for the last 2–3 minutes.
