Description

Creamy classic potato salad made with red potatoes, eggs, pickles, and a tangy mayo-mustard dressing.


Ingredients

Scale
  • 3 pounds red potatoes, cubed
  • 3 celery ribs, diced
  • 1 cup dill pickles, diced
  • 1/2 cup red onion, diced
  • 3 hard-boiled large eggs, diced
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Cover cubed potatoes with water and bring to a boil
  2. Reduce heat and simmer until fork-tender
  3. Drain and rinse potatoes with cool water
  4. Let potatoes cool, then drain well
  5. Combine potatoes, celery, pickles, onion, and eggs
  6. Stir in mayonnaise and mustard until mixed
  7. Season with salt and pepper
  8. Refrigerate until ready to serve

  1. Chill at least one hour before serving
  2. Stir gently before serving leftovers
