Description
Tender chicken breasts are seared golden and simmered in a luscious basil cream sauce, then topped with melty mozzarella. A quick, cozy, family-friendly dinner that feels indulgent yet comes together in just 30 minutes.
Ingredients
3–4 boneless, skinless chicken breasts (680–900 g total)
1 tbsp olive oil
Salt and pepper, to taste
2–3 garlic cloves, finely chopped
1 cup (240 ml) heavy cream
½ cup (120 ml) low-sodium chicken broth
2 tbsp chopped fresh basil leaves
1 tsp Italian seasoning
150–200 g shredded whole-milk mozzarella cheese
Instructions
Pat chicken breasts dry and season with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Sear chicken 5–7 minutes per side until golden and cooked through (165°F internal temp). Remove and set aside.
Reduce heat to medium. Add garlic to the skillet, sauté 30 seconds until fragrant.
Deglaze with chicken broth, scraping up browned bits. Simmer 1 minute.
Stir in cream, basil, and Italian seasoning. Simmer 2–3 minutes until slightly thickened.
Return chicken to skillet. Spoon sauce over chicken, then top with mozzarella. Cover and cook 2–3 minutes until melted and bubbly.
Serve hot, spooning extra sauce over chicken. Garnish with fresh basil if desired.
Notes
Pound chicken breasts to even thickness for tenderness.
Fresh basil is best, but dried basil works in a pinch.
Adjust sauce consistency with extra broth if it thickens too much.
Shredding mozzarella yourself ensures smoother melting.
