Description

Layered with creamy vanilla pudding, and soft graham crackers, and topped with a rich chocolate glaze, this no-bake treat is the perfect dessert for any occasion. It’s a quick and easy way to make an elegant dessert that everyone will love, without turning on the oven.


Ingredients

For the Cake Layers:
  • 1 box (14.4 oz) graham crackers
  • 2 cups cold milk
  • 2 packs (3.4 oz each) of instant vanilla pudding mix
  • 8 oz whipped topping (like Cool Whip), thawed
For the Chocolate Glaze:
  • 1 cup semi-sweet chocolate chips
  • 2 tbsp unsalted butter
  • 2 tbsp milk
  • 1 tsp vanilla extract

Instructions

  • Prepare the Pudding Layer:

    • In a large bowl, whisk together the instant vanilla pudding mix and cold milk for about 2 minutes until it thickens.
    • Gently fold in the whipped topping until well combined. Set aside.
  • Assemble the Cake Layers:

    • In a 9×13-inch baking dish, place a layer of graham crackers at the bottom. You may need to break some crackers to fit the dish properly.
    • Spread half of the pudding mixture evenly over the graham crackers.
    • Repeat the process by adding another layer of graham crackers and then spreading the remaining pudding mixture on top.
  • Prepare the Chocolate Glaze:

    • In a microwave-safe bowl, combine the semi-sweet chocolate chips, butter, and milk. Microwave in 30-second intervals, stirring between each, until the mixture is smooth and glossy.
    • Stir in the vanilla extract and mix until fully combined.
  • Top the Cake with Chocolate Glaze:

    • Pour the chocolate glaze over the top layer of pudding, spreading it evenly with a spatula to cover the entire surface.
  • Chill and Set:

    • Cover the dish with plastic wrap or foil and refrigerate the cake for at least 4 hours or overnight to allow the flavors to meld and the dessert to firm up.
