Description

This no-bake raspberry lemon swirl cheesecake combines the tangy freshness of lemon with the sweet burst of raspberries in a creamy, smooth filling. Perfect for any occasion, it’s easy to make and doesn’t require an oven. A dessert that’s as stunning as it is delicious!

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • ¼ cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 tsp vanilla extract

For the Raspberry Swirl:

  • 1 cup fresh raspberries (or frozen, thawed)
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice

Optional Garnishes:

  • Fresh raspberries
  • Lemon zest
  • Mint leaves

Instructions

  • Prepare the Crust: In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until combined, then press firmly into the bottom of a 9-inch springform pan. Chill in the fridge for 15-20 minutes.
  • Make the Raspberry Swirl: In a saucepan over medium heat, combine raspberries, sugar, and lemon juice. Cook until raspberries break down and the mixture thickens (5-7 minutes). Let cool completely.
  • Prepare the Filling: In a large bowl, beat softened cream cheese until smooth. Add heavy cream, powdered sugar, lemon juice, lemon zest, and vanilla extract. Beat until light and fluffy.
  • Assemble the Cheesecake: Pour the cheesecake filling over the chilled crust. Spoon the raspberry mixture over the top in dollops, then gently swirl with a knife or toothpick.
  • Chill: Refrigerate for at least 4 hours, or ideally overnight, to set.
  • Serve: Garnish with fresh raspberries, lemon zest, and mint leaves. Slice and enjoy!
