Description
A bright and bubbly non-alcoholic limoncello spritz made with homemade lemon oleo saccharum and sparkling water for a refreshing Italian-style mocktail.

- Lemon peel from 4–5 lemons
- 1 cup granulated sugar
- 1–1½ oz lemon oleo saccharum
- 1 cup lemon sparkling water or non-alcoholic Prosecco
- 1 oz fresh lemon juice (optional)
- Lemon slice or thyme sprig for garnish (optional)
Instructions
- Wash and peel the lemons, avoiding the white pith.
- Combine the lemon peel with sugar in a jar and gently muddle.
- Cover and leave at room temperature overnight.
- Strain the syrup, pressing the peel to extract all liquid.
- Fill a large wine glass with ice.
- Add the lemon oleo saccharum and sparkling water or non-alcoholic Prosecco.
- Taste and add lemon juice if desired.
- Garnish and serve immediately.
Notes
- Sugar quantity does not need to be exact as long as the peel is well covered.
- Lemon juice is optional but adds extra tartness.
