Description

A bright and bubbly non-alcoholic limoncello spritz made with homemade lemon oleo saccharum and sparkling water for a refreshing Italian-style mocktail.


Ingredients

Scale
  • Lemon peel from 4–5 lemons
  • 1 cup granulated sugar
  • 1 oz lemon oleo saccharum
  • 1 cup lemon sparkling water or non-alcoholic Prosecco
  • 1 oz fresh lemon juice (optional)
  • Lemon slice or thyme sprig for garnish (optional)

Instructions

  1. Wash and peel the lemons, avoiding the white pith.
  2. Combine the lemon peel with sugar in a jar and gently muddle.
  3. Cover and leave at room temperature overnight.
  4. Strain the syrup, pressing the peel to extract all liquid.
  5. Fill a large wine glass with ice.
  6. Add the lemon oleo saccharum and sparkling water or non-alcoholic Prosecco.
  7. Taste and add lemon juice if desired.
  8. Garnish and serve immediately.

Notes

  1. Sugar quantity does not need to be exact as long as the peel is well covered.
  2. Lemon juice is optional but adds extra tartness.
