Description

Old Fashioned Rhubarb Crisp is a sweet and tangy dessert with a buttery oat topping, perfect for spring and summer.


Ingredients

Scale
  • 4 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 1 teaspoon vanilla extract
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 cup quick oats
  • 1 teaspoon cinnamon
  • 1/2 cup butter, melted

Instructions

  1. Preheat oven to 350°F
  2. Wash and chop the rhubarb into small pieces
  3. In a saucepan combine rhubarb, granulated sugar, cornstarch, and water
  4. Cook over medium heat while stirring until thickened
  5. Remove from heat and stir in vanilla extract
  6. Pour mixture into a greased baking dish
  7. In a bowl mix brown sugar, flour, oats, and cinnamon
  8. Stir in melted butter until crumbly
  9. Spread topping evenly over rhubarb mixture
  10. Bake for 40 to 45 minutes until golden and bubbly

Notes

  1. Use fresh rhubarb for best flavor
  2. Adjust sugar depending on tartness of rhubarb
  3. Serve warm with vanilla ice cream
