Old Fashioned Rhubarb Crisp is a sweet and tangy dessert with a buttery oat topping, perfect for spring and summer.
Ingredients

- 4 cups rhubarb, chopped
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 cup water
- 1 teaspoon vanilla extract
- 1 cup brown sugar
- 1 cup all-purpose flour
- 1 cup quick oats
- 1 teaspoon cinnamon
- 1/2 cup butter, melted
Instructions
- Preheat oven to 350°F
- Wash and chop the rhubarb into small pieces
- In a saucepan combine rhubarb, granulated sugar, cornstarch, and water
- Cook over medium heat while stirring until thickened
- Remove from heat and stir in vanilla extract
- Pour mixture into a greased baking dish
- In a bowl mix brown sugar, flour, oats, and cinnamon
- Stir in melted butter until crumbly
- Spread topping evenly over rhubarb mixture
- Bake for 40 to 45 minutes until golden and bubbly

- Use fresh rhubarb for best flavor
- Adjust sugar depending on tartness of rhubarb
- Serve warm with vanilla ice cream
