Description

Old-Fashioned Strawberry Pie is a chilled fresh berry dessert made with a flaky pie crust, glossy strawberry filling, and a thin white chocolate layer that helps keep the crust crisp.


Ingredients

  • 1 9-inch pie dough round
  • 1/4 cup white chocolate chips
  • 6 1/2 cups fresh strawberries, washed, hulled, and sliced
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 1/2 tablespoons cornstarch
  • 1/2 cup water
  • 1 1/2 tablespoons lemon juice
  • Whipped cream, for serving

Instructions

  1. Fit the pie dough round into a 9-inch pie dish and crimp the edges.
  2. Bake the pie shell according to the package directions, then let it cool completely.
  3. Add 2 1/2 cups of the sliced strawberries to a small bowl and mash them with a fork until jammy.
  4. Add the mashed strawberries, sugar, water, lemon juice, and cornstarch to a small saucepan and stir well.
  5. Bring the mixture to a boil over medium heat, then simmer for 4 to 5 minutes, stirring often, until very thick.
  6. Remove the saucepan from the heat, stir in the vanilla extract, and let the filling cool completely.
  7. Microwave the white chocolate chips for 30 to 45 seconds, stirring until melted and smooth.
  8. Spread the melted white chocolate over the bottom of the cooled pie shell and let it firm up.
  9. Stir the remaining sliced strawberries into the cooled cooked filling.
  10. Transfer the strawberry filling to the prepared pie shell and spread it evenly.
  11. Refrigerate the pie for 6 to 8 hours or overnight until fully set.
  12. Serve chilled with whipped cream.

Notes

  1. Use ripe fresh strawberries for the best flavor and texture.
  2. Let the crust and cooked filling cool completely before assembling the pie.
  3. Do not freeze this pie because the strawberries can release too much liquid after thawing.
  4. Store leftovers covered in the refrigerator for up to 3 days.
