One Pot Chicken Alfredo Pasta combines creamy, rich Parmesan sauce, tender chicken, and perfectly cooked pasta, all made in a single pot. This dish offers the comfort and indulgence of traditional Alfredo without the hassle of multiple pans. It’s easy to prepare, full of flavor, and perfect for weeknights or meal prepping. No extra steps or complicated techniques, just cozy, delicious pasta in one go.

Ingredients

Scale
  • 2 boneless, skinless chicken breasts (or thighs)

  • 2 cups pasta (penne, fettuccine, or rigatoni)

  • 2 cups chicken broth (low sodium)

  • 1 cup whole milk or 2% milk

  • 1/2 cup heavy cream

  • 1 cup freshly grated Parmesan cheese

  • 1 tablespoon olive oil

  • 2 cloves garlic (minced)

  • 1/2 onion (chopped)

  • Salt and pepper to taste

  • 1 teaspoon dried oregano (optional)

  • Fresh parsley (for garnish)

Instructions

  • Heat oil in a large pot. Add chicken pieces and cook until golden brown on the outside. Set aside.

  • In the same pot, sauté garlic and onion for 2-3 minutes until soft and fragrant.

  • Add chicken broth, milk, and pasta to the pot. Stir to combine. Bring to a gentle boil.

  • Reduce heat and simmer for 10-12 minutes, stirring occasionally, until pasta is tender.

  • Stir in heavy cream and Parmesan cheese. Continue stirring until the cheese melts and the sauce thickens.

  • Return chicken to the pot and stir to combine. Cook for 2-3 minutes to heat through.

  • Season with salt, pepper, and optional oregano. Garnish with fresh parsley and serve hot.

Notes

For a creamy, thicker sauce, let the pasta simmer a little longer or add a spoonful of cream cheese.

You can add vegetables like spinach, peas, or zucchini toward the end for extra nutrition.

For a gluten-free version, use gluten-free pasta and check that your broth is gluten-free.
