Description
This one-pot spinach tomato pasta blends creamy tomato sauce, tender pasta, fresh spinach, and basil for a comforting and flavorful weeknight meal.

- 5 garlic cloves (minced)
- 1 tsp red pepper flakes
- 1 tsp black pepper
- 1 tbsp sun-dried tomato oil
- 1/4 cup fresh basil (thinly sliced)
- 4 cups chicken stock
- 14 oz penne pasta
- 1 tsp kosher salt
- 5 oz fresh spinach
- 1 cup heavy cream (room temperature)
- 1/2 cup shredded Parmesan cheese (finely grated)
- 1/3 cup tomato paste
- 1 cup sun-dried tomatoes (chopped)
- 1 medium onion (diced)
Instructions
- Heat a pot over medium-high heat and add sun-dried tomato oil, then sauté onion until lightly browned.
- Add garlic and sun-dried tomatoes and cook 2-3 minutes while stirring.
- Stir in tomato paste and cook a couple more minutes.
- Add chicken stock gradually to deglaze and combine.
- Pour in heavy cream and stir until smooth.
- Stir in black pepper, salt, and red pepper flakes.
- Add penne pasta and cook on low-medium heat for about 10 minutes, stirring often.
- Add spinach and basil and let spinach wilt.
- Stir in Parmesan until melted and creamy.
- Turn off heat, mix well, and serve.
Notes
- Frozen spinach works if you squeeze out excess moisture.
- Add chicken or shrimp for extra protein.
- Use vegetable stock for a vegetarian version.
