Ingredients

  • 2 tablespoons light brown sugar
  • 6 tablespoons melted butter
  • 3 ounces orange-flavored gelatin
  • 1/2 cup boiling water
  • 1/2 cup iced water
  • 8 ounces cream cheese, softened
  • 1/4 cup sugar
  • 1 can sweetened condensed milk
  • 1/4 cup freshly squeezed orange juice
  • 1 1/2 cups whipped cream
  • Orange food coloring, optional
  • 3 tablespoons butter
  • 1/3 cup freshly squeezed orange juice
  • 1 1/2 teaspoons orange zest
  • 1/3 cup sugar
  • 1 egg
  • 1 egg yolk
  • Whipped cream for garnish
  • Orange wedges for garnish
  • Mint leaves for garnish

Instructions

  1. Line a 9 x 9-inch pan with foil or plastic wrap and lightly grease it.
  2. Mix graham cracker crumbs, brown sugar, and melted butter until combined.
  3. Press the crust mixture firmly into the pan and refrigerate.
  4. Dissolve orange gelatin in boiling water, then stir in iced water and cool.
  5. Beat cream cheese and sugar until smooth.
  6. Mix in sweetened condensed milk and orange juice until creamy.
  7. Pour in dissolved gelatin and mix until combined.
  8. Fold in whipped cream gently.
  9. Spread filling over crust and refrigerate for several hours or overnight.
  10. For the curd, melt butter in a saucepan over medium heat.
  11. Whisk in sugar, orange zest, and orange juice.
  12. Add egg and egg yolk, then cook while stirring until thickened.
  13. Cool the curd completely.
  14. Spread orange curd over chilled cheesecake bars.
  15. Garnish with whipped cream, orange wedges, and mint leaves before serving.
