Ingredients

  • 4 oz (115 g) semisweet chocolate, chopped
  • ½ cup (115 g) unsalted butter
  • ½ cup (100 g) granulated sugar
  • 2 large eggs
  • 2 egg yolks
  • ¼ cup (30 g) all-purpose flour
  • 1 tbsp cocoa powder
  • ½ tsp vanilla extract
  • Pinch of salt
  • 6 Oreo cookies, crushed
  • Extra crushed Oreos for dusting

Instructions

  • Prepare the ramekins: Grease 4 ramekins with butter and dust them with crushed Oreos. Preheat your oven to 425°F (220°C).
  • Melt chocolate and butter: In a microwave-safe bowl or double boiler, melt the semisweet chocolate and butter together, stirring until smooth. Set aside to cool slightly.
  • Whisk eggs and sugar: In a mixing bowl, whisk the eggs, egg yolks, and sugar until thick and pale. This will help create the soft, fluffy texture.
  • Combine wet ingredients: Gradually add the melted chocolate mixture to the eggs and whisk until combined.
  • Add dry ingredients: Sift together flour, cocoa powder, and salt. Gently fold this mixture into the wet ingredients using a spatula.
  • Incorporate Oreos: Fold in the crushed Oreos to add a delightful crunch.
  • Assemble the cakes: Spoon the batter into prepared ramekins, filling each about halfway. Add a piece of chocolate or more crushed Oreos to the center for a molten surprise. Top with remaining batter.
  • Bake: Place the ramekins on a baking sheet and bake for 12-14 minutes. The edges should be set, while the center remains slightly soft.
  • Cool and serve: Let the cakes cool for 2-3 minutes, then gently invert onto plates. Dust with powdered sugar and serve warm.

Notes

  • Don’t Overbake: Keep a close eye on the cakes while baking. Overbaking will solidify the molten center, so aim for set edges with a slightly soft middle for the perfect lava effect.
  • Grease Thoroughly: Ensure the ramekins are well-greased and dusted with crushed Oreos or cocoa powder to prevent sticking. This step makes it easier to invert the cakes onto plates without breaking.
