Description
A creamy, cheesy Out-of-this-World Corn Dip made with MexiCorn, green chiles, jalapeños, sour cream, mayonnaise, green onions, and sharp cheddar. This easy make-ahead appetizer is perfect for game day, potlucks, barbecues, holidays, and parties.

- 2 (11-ounce) cans MexiCorn, thoroughly drained
- 1 (4-ounce) can chopped green chiles, drained
- 1 (4-ounce) can chopped jalapeño peppers, drained
- 4 green onions, thinly sliced
- 1 cup mayonnaise
- 1 cup sour cream
- 1/2 teaspoon ground black pepper
- 1 teaspoon garlic powder
- 2 cups shredded sharp cheddar cheese
- Fritos Scoops corn chips, for serving
Instructions
- Thoroughly drain the MexiCorn, chopped green chiles, and chopped jalapeño peppers to remove as much excess liquid as possible.
- Thinly slice the green onions and shred the sharp cheddar cheese if using a block.
- Add the MexiCorn, green chiles, jalapeños, green onions, mayonnaise, sour cream, black pepper, garlic powder, and shredded cheddar cheese to a large mixing bowl.
- Stir until every ingredient is evenly combined and coated in the creamy mixture.
- Cover the bowl tightly and refrigerate for at least 2 hours so the flavors can blend.
- Stir the dip again before serving.
- Serve chilled with Fritos Scoops, tortilla chips, crackers, pretzels, or fresh vegetables.
Notes
- Drain all canned ingredients very well to prevent a watery dip.
- For the best flavor, prepare the dip several hours ahead or refrigerate it overnight.
- If MexiCorn is unavailable, use drained sweet corn and add 1/4 cup finely chopped roasted red peppers.
- Reduce the jalapeños for a milder dip or add extra jalapeños, cayenne pepper, or hot sauce for more heat.
- Pepper jack, smoked Gouda, cooked bacon, diced ham, cilantro, or parsley can be added for variation.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Stir well before serving leftovers.
- Do not freeze because the mayonnaise and sour cream may separate after thawing.
