Description

A creamy, cheesy Out-of-this-World Corn Dip made with MexiCorn, green chiles, jalapeños, sour cream, mayonnaise, green onions, and sharp cheddar. This easy make-ahead appetizer is perfect for game day, potlucks, barbecues, holidays, and parties.


Ingredients

  • 2 (11-ounce) cans MexiCorn, thoroughly drained
  • 1 (4-ounce) can chopped green chiles, drained
  • 1 (4-ounce) can chopped jalapeño peppers, drained
  • 4 green onions, thinly sliced
  • 1 cup mayonnaise
  • 1 cup sour cream
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 2 cups shredded sharp cheddar cheese
  • Fritos Scoops corn chips, for serving

Instructions

  1. Thoroughly drain the MexiCorn, chopped green chiles, and chopped jalapeño peppers to remove as much excess liquid as possible.
  2. Thinly slice the green onions and shred the sharp cheddar cheese if using a block.
  3. Add the MexiCorn, green chiles, jalapeños, green onions, mayonnaise, sour cream, black pepper, garlic powder, and shredded cheddar cheese to a large mixing bowl.
  4. Stir until every ingredient is evenly combined and coated in the creamy mixture.
  5. Cover the bowl tightly and refrigerate for at least 2 hours so the flavors can blend.
  6. Stir the dip again before serving.
  7. Serve chilled with Fritos Scoops, tortilla chips, crackers, pretzels, or fresh vegetables.

Notes

  1. Drain all canned ingredients very well to prevent a watery dip.
  2. For the best flavor, prepare the dip several hours ahead or refrigerate it overnight.
  3. If MexiCorn is unavailable, use drained sweet corn and add 1/4 cup finely chopped roasted red peppers.
  4. Reduce the jalapeños for a milder dip or add extra jalapeños, cayenne pepper, or hot sauce for more heat.
  5. Pepper jack, smoked Gouda, cooked bacon, diced ham, cilantro, or parsley can be added for variation.
  6. Store leftovers in an airtight container in the refrigerator for up to 4 days.
  7. Stir well before serving leftovers.
  8. Do not freeze because the mayonnaise and sour cream may separate after thawing.
