Description

Hasselback-style zucchini brushed with garlic butter, Parmesan, paprika, and Italian herbs, then roasted until crisp around the edges and tender in the center.

Ingredients

Scale
  • 3 to 4 medium zucchini, washed and dried
  • 4 tablespoons unsalted butter, melted
  • 1 cup finely grated Parmesan cheese
  • 1 tablespoon minced garlic
  • 1 tablespoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon freshly cracked black pepper
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper or lightly grease it.
  2. Place one zucchini between two wooden spoon handles or chopsticks. Cut crosswise slices about 1/4 inch apart without cutting through the bottom. Repeat with the remaining zucchini.
  3. Arrange the zucchini on the prepared baking sheet.
  4. Stir the melted butter, Parmesan, garlic, paprika, Italian seasoning, salt, and black pepper in a small bowl.
  5. Gently open the zucchini slices and brush or spoon the garlic-Parmesan mixture over the tops and between the cuts.
  6. Roast for 20 minutes, then brush any melted seasoning from the pan back over the zucchini.
  7. Continue roasting for about 10 minutes, or until the zucchini feels tender and the Parmesan looks golden.
  8. Broil for 1 to 2 minutes for deeper browning, watching closely.
  9. Rest for 3 minutes, garnish with chopped parsley, and serve warm.

Notes

  1. Choose medium zucchini of similar size so they cook evenly.
  2. Dry the zucchini thoroughly before slicing to reduce excess moisture.
  3. Use chopsticks or wooden spoon handles as cutting guides.
  4. Leave space between each zucchini so the edges roast instead of steam.
  5. For brighter flavor, add lemon zest to the butter mixture or squeeze fresh lemon juice over the finished zucchini.
  6. Store leftovers in an airtight container in the refrigerator for up to 3 days.
  7. Reheat at 375°F for 8 to 10 minutes or in an air fryer at 350°F for 4 to 6 minutes.
