Overnight Blueberry French Toast Casserole

Description

A warm, make-ahead breakfast casserole filled with blueberries, cream cheese, and custardy bread. Perfect for brunch or holidays.


Ingredients

Scale

1 cup blueberries

8 oz cream cheese (softened)

1 cup powdered sugar

2 tbsp milk

1 tbsp vanilla extract (split)

2 loaves cubed French bread

2 cups milk

8 eggs

1 tsp cinnamon

1/2 tsp nutmeg

1 cup blueberries (for topping)


Instructions

1. In a bowl, mix softened cream cheese, sugar, milk, and half the vanilla until smooth.

2. Fold in 1 cup blueberries.

3. Layer half the bread in a greased 10×14 dish.

4. Spread cream cheese mixture over bread and top with remaining cubes.

5. In another bowl, whisk milk, eggs, spices, and vanilla. Pour evenly over bread.

6. Top with 1 cup blueberries, cover with foil, and refrigerate overnight.

7. Preheat oven to 375°F. Bake 45 minutes covered, then uncover and bake 30 minutes more.

8. Let cool slightly before serving.

Notes

Use stale French bread for best texture.

Add streusel or icing drizzle for extra sweetness.

Freeze unbaked casserole up to 2 months for an easy make-ahead breakfast.
