1 pound breakfast sausage

8 jumbo eggs

1/2 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon cayenne pepper (optional)

1/2 teaspoon ground mustard

1 teaspoon dried sage

1/2 teaspoon dried chives or 1 tablespoon fresh chives

2 cups half-and-half

1 1/2 cups yellow shredded sharp cheddar cheese
