Instructions
- Peel the bananas and slice them crosswise into rounds about 1/3 inch thick.
- Combine the sugar, cinnamon, and optional nutmeg in a small bowl.
- Lightly coat a large nonstick skillet with oil or melt the butter over medium-low heat.
- Arrange the banana slices in the skillet in a single layer.
- Sprinkle half of the cinnamon-sugar mixture evenly over the banana slices.
- Cook the bananas without moving them for 2 to 3 minutes, until the bottoms look lightly golden.
- Gently flip each banana round with a thin spatula.
- Sprinkle the remaining cinnamon-sugar mixture over the bananas.
- Cook for another 2 to 3 minutes, until the slices feel soft, look glossy, and remain intact.
- Remove the bananas from the skillet and serve immediately.
Notes
- Use yellow bananas with several brown spots for the best balance of sweetness and firmness.
- Avoid extremely soft or blackened bananas because they may become mushy during cooking.
- Keep the skillet over medium-low heat so the sugar does not burn.
- Remove the bananas as soon as they soften because they continue cooking briefly after leaving the skillet.
