- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese

- 1 large egg, beaten

- Olive oil for frying
Instructions
- Pound the chicken breasts to an even thickness.
- Season both sides with salt and pepper.
- Set up three bowls with flour, beaten egg, and a mixture of breadcrumbs, Parmesan, and basil.
- Coat each chicken breast in flour, dip in egg, then press into the breadcrumb mixture.
- Heat olive oil in a frying pan over medium heat.
- Cook the cutlets for 5 to 7 minutes per side until golden and cooked through.
- Transfer to paper towels to drain excess oil and serve immediately.
Notes
- Add crushed nuts to the breadcrumb mixture for extra crunch.
- Wrap tightly and freeze for up to 3 months.
