Description

This creamy Parmesan Chicken Pasta combines juicy chicken, tender pasta, and fresh broccoli in a single pot for a rich, flavorful dinner that’s ready in under 45 minutes.


Ingredients

2 tbsp olive oil

1 lb boneless, skinless chicken breasts (cut into 1-inch pieces)

1 tsp garlic powder

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

4 cloves garlic, minced

4 cups low-sodium chicken broth

1 lb mezzi rigatoni or short pasta

12 oz broccoli florets

1/2 cup heavy cream

1 cup grated Parmesan cheese

2 tbsp fresh parsley


Instructions

1. Heat olive oil in a skillet over medium-high heat. Add chicken, season with spices, and sear until golden.

2. Remove chicken and set aside. Add garlic; cook until fragrant.

3. Pour in broth, add pasta and chicken, and bring to a simmer.

4. Cover and cook 12 minutes, stirring occasionally.

5. Add broccoli; cook 3–4 minutes.

6. Remove from heat; stir in cream and Parmesan until creamy.

7. Season and garnish with parsley.

Notes

Store leftovers in the fridge for up to 4 days. Reheat with a splash of broth for best texture.
