- 2 New York Strip Steaks (1.5 inches thick)
- 2 teaspoons beef seasoning or salt and pepper
- 3 tablespoons mayonnaise
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic minced
- 1 teaspoon dried basil
- 1/2 teaspoon cracked black pepper
Instructions
- Preheat smoker to 225 degrees F
- Season steaks on all sides with beef seasoning
- Mix mayonnaise, Parmesan, garlic, basil, and black pepper in a bowl
- Place steaks on smoker and cook until 10 degrees below desired temperature
- Preheat oven to high broil and heat a cast iron skillet for 8 to 10 minutes
- Remove steaks and spread Parmesan mixture evenly on top
- Place steaks on hot skillet and broil for 2 to 3 minutes until crust is bubbly and browned
- Rest steaks for 5 to 10 minutes before serving

- Use freshly grated Parmesan cheese for best flavor and texture
- Do not skip the resting time to keep the steak juicy
