Description
A healthy 10 minute zucchini side dish packed with sweet corn, Parmesan cheese, fresh lime juice, and herbs. Fast, fresh, and full of flavor.
Ingredients

- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 4 medium zucchini, diced
- 1 cup corn kernels
- 1/4 teaspoon dried basil
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried thyme
- Kosher salt to taste
- Freshly ground black pepper to taste
- 2 tablespoons freshly squeezed lime juice
- 2 tablespoons chopped fresh cilantro leaves
- 1/2 cup shaved Parmesan cheese
Instructions
- Heat olive oil in a large cast iron skillet over medium-high heat.
- Add garlic and cook for 1 minute until fragrant.
- Add zucchini, corn, basil, oregano, and thyme.
- Cook for 4 to 5 minutes, stirring occasionally, until zucchini is tender.
- Season with kosher salt and black pepper.
- Remove from heat and stir in lime juice and cilantro.
- Transfer to a serving dish.
- Top with shaved Parmesan and serve immediately.
Notes
- Use fresh, frozen, canned, or roasted corn.
- Do not overcook the zucchini.
- Freshly shaved Parmesan provides the best flavor.
- Add red pepper flakes for a spicy variation.
