Description

A healthy 10 minute zucchini side dish packed with sweet corn, Parmesan cheese, fresh lime juice, and herbs. Fast, fresh, and full of flavor.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 4 medium zucchini, diced
  • 1 cup corn kernels
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons chopped fresh cilantro leaves
  • 1/2 cup shaved Parmesan cheese

Instructions

  1. Heat olive oil in a large cast iron skillet over medium-high heat.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add zucchini, corn, basil, oregano, and thyme.
  4. Cook for 4 to 5 minutes, stirring occasionally, until zucchini is tender.
  5. Season with kosher salt and black pepper.
  6. Remove from heat and stir in lime juice and cilantro.
  7. Transfer to a serving dish.
  8. Top with shaved Parmesan and serve immediately.

Notes

  1. Use fresh, frozen, canned, or roasted corn.
  2. Do not overcook the zucchini.
  3. Freshly shaved Parmesan provides the best flavor.
  4. Add red pepper flakes for a spicy variation.
