Description

Festive cookie pie loaded with chocolate chips, patriotic candies, colorful sprinkles, and creamy frosting for the perfect summer dessert.


Ingredients

  • ½ cup packed brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1⅓ cups all-purpose flour
  • ½ tablespoon cornstarch
  • ¼ teaspoon baking soda
  • ¼ teaspoon table salt
  • ½ cup semi-sweet chocolate chips
  • ½ cup mini red, white, and blue M&M’s
  • ¼ cup patriotic sprinkles
  • ¼ cup unsalted butter, softened
  • Pinch of salt
  • ¾ teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1 tablespoon heavy whipping cream
  • Extra sprinkles for decorating

Instructions

  1. Preheat oven to 375 degrees Fahrenheit and spray a 9-inch pie plate with nonstick spray.
  2. Beat butter, brown sugar, and granulated sugar until creamy.
  3. Add egg and vanilla extract and mix until smooth.
  4. Stir in flour, cornstarch, baking soda, and salt until a soft dough forms.
  5. Fold in chocolate chips, mini M&M’s, and sprinkles evenly.
  6. Spread dough into the prepared pie plate.
  7. Bake for 17 to 18 minutes until lightly golden around the edges.
  8. Cool completely on a wire rack.
  9. Beat butter, salt, and vanilla extract until creamy.
  10. Add powdered sugar and heavy cream and beat until fluffy.
  11. Pipe frosting swirls around the edge using a piping bag fitted with a 1M tip.
  12. Decorate with additional sprinkles before serving.

Notes

  1. Use softened butter for a smooth cookie dough.
  2. Allow the cookie pie to cool fully before frosting.
  3. Line the pan with parchment paper for easier removal.
  4. Store leftovers tightly covered for up to 3 days.
  5. Freeze slices individually for longer storage.
