Description

Paula Deen’s Tomato Pie is a warm Southern tomato pie with fresh basil, green onion, melted cheddar, mozzarella, and a golden creamy topping.


Ingredients

  • 4 medium ripe tomatoes, peeled and sliced
  • 1 teaspoon salt, for draining tomatoes
  • 10 fresh basil leaves, chopped
  • 1/2 cup chopped green onion
  • 1 prebaked 9-inch deep-dish pie shell
  • 1 cup grated mozzarella cheese
  • 1 cup grated cheddar cheese
  • 1 cup mayonnaise
  • 1/2 teaspoon black pepper
  • Extra salt, to taste
  • Optional homemade crust: 2 1/2 cups all-purpose flour
  • Optional homemade crust: 1/4 teaspoon fine salt
  • Optional homemade crust: 3 tablespoons granulated sugar
  • Optional homemade crust: 1/4 cup cold vegetable shortening
  • Optional homemade crust: 12 tablespoons cold cubed butter
  • Optional homemade crust: 1/4 to 1/2 cup ice water

Instructions

  1. Preheat the oven to 350°F.
  2. Place sliced tomatoes in a colander in a single layer, sprinkle with salt, and drain for 10 minutes.
  3. Pat the tomato slices gently with paper towels to remove extra moisture.
  4. Layer the drained tomatoes, chopped basil, and green onion in the prebaked pie shell.
  5. Season the tomato layer with black pepper and a little extra salt, if needed.
  6. Stir the mozzarella cheese, cheddar cheese, and mayonnaise together in a bowl.
  7. Spread the cheese mixture evenly over the tomato layer.
  8. Bake for 30 minutes, or until the topping turns lightly browned.
  9. Let the pie rest for 10 minutes before slicing.
  10. Serve warm.

Notes

  1. Use ripe but firm tomatoes for the best texture.
  2. Do not skip draining the tomatoes, because this helps prevent a soggy crust.
  3. A deep-dish prebaked pie shell works best for holding the filling.
  4. For homemade crust, chill the dough for at least 2 hours before rolling.
  5. The homemade crust recipe makes two 9-inch pie crusts; use one and save the other for another pie.
  6. Reheat leftovers in a 325°F oven for the best crust texture.
